Made my own version of Super Green Soup with Cashew Cream by #ameliafreer. So easy and just so delish and nourishing. Just chucked in frozen spinach, peas, celery, broccoli -stems and all, and some courgettes after sweating down some onions. Poured over stock and that was it! Made enough for days. Try it! Cashew cream is lush and an added bonus. Soak 150g cashews in 300ml hot water for a few hours, drain and blitz until smooth with 300ml fresh water, garlic clove and lemon zest. Sprinkle with chilli flakes and fresh parsley or coriander if you have some.
