One of my favourites for the whole family (without the garnish for the kids). I find mine will eat a red soup but no other colour! 🍅 So for #supersoupsaturdaytoday we have #hemsleyhemsley Tomato Soup (with cannellini bean & carrot 🥕). I make loads of this so again doubled their recipe. So chop and sauté 2 large onions for a bit then chuck in 4 chopped garlic cloves and 4 carrots with a couple of tablespoons of tomato purée, salt and pepper. Then tip in 4 cans tomatoes and 2 cans cannellini beans (or butter beans) with 800ml stock/bone broth or water. Simmer til carrots tender, blitz and enjoy! This time I sprinkled with feta, parsley, (recipe suggested basil 🌿), walnuts, pumpkin and sunflower seeds with a drizzle of extra virgin olive oil. Perfecto!
