Beetroot & Ginger Soup (inspired by Madeleine Shaw's recipe)

🥄 One red onion, 2 to 3 garlic cloves and an inch of ginger, 4-6 beets, stock, lemon zest and seasoning. I whizz up my onion then soften in oil/butter, then whizz up garlic and ginger (cos I’m lazy and hate fiddly chopping) and add that in a few mins later, followed by the trimmed but not peeled beetroot. You can grate (which I didn’t) or cut into small cubes. Then grated zest of a lemon and stock to your desired consistency. Simmer and blend. Today I chose feta, pumpkin & sesame seeds to sprinkle on top. Makes about 4 bowls so double to last a few days!
